    • Significant progress has been made in the study of the structural characteristics and antioxidant activity of polysaccharides from Pinellia ternata and its processed products. In this study, the glycosidic bond structure characteristics of Pinellia ternata and its processed polysaccharides were analyzed by glycography, high performance thin layer chromatography and fluorescence assisted gel electrophoresis, and the relationship between them and antioxidant activity was discussed. Research has shown that the polysaccharides of Pinellia ternata and its processed products contain various glycosidic bonds, such as β - galactopyranoside bonds β-1, 4-mannose glycosidic bond, etc. The presence of these glycosidic bonds has an impact on the antioxidant activity of polysaccharides. In vitro antioxidant experiments, polysaccharides treated with specific enzymatic hydrolysis showed significant changes in their ability to scavenge free radicals. This research achievement not only helps to further clarify the material basis of the related effects of Pinellia ternata and its processed products, but also provides new ideas and methods for analyzing the structural characteristics of polysaccharides in traditional Chinese medicine. Experts say that this research is of great significance in the field of traditional Chinese medicine polysaccharides, providing new directions for future research and development of traditional Chinese medicine.
