    • The latest research has found that sugars, phenolic acids, and flavonoids may be key substrates involved in the browning process of Pinellia ternata, involving pathways such as phenylpropanoid metabolism, biosynthesis of flavonoids and flavonols, purine metabolism, etc., providing theoretical basis for further exploration of the browning mechanism of Pinellia ternata.
