目的: 分析芦丁分解速度与加热温度的相关性。 方法: 在120~250 ℃每间隔10 ℃对芦丁单体分别加热30 min
得到14份受热样品
采用高效液相色谱法测定这些受热样品中的芦丁、槲皮素的含量。 结果: 在120~150 ℃加热
芦丁含量无显著性变化;160 ℃~200 ℃加热
芦丁开始分解
槲皮素含量升高
且随着温度升高
分解速度增快
槲皮素含量也越高。210~250 ℃加热
芦丁、槲皮素含量均降低。 结论: 芦丁在160 ℃以前几无分解
而在160~200 ℃部分分解产生槲皮素
而在210 ℃后加热
芦丁被破坏。
Abstract
Objective: To analyze the relationship between the decomposition rate of rutin and the heating tempreature. Method: Rutin monomers were heated from 120 ℃ to 250 ℃ for 30 min
according to internal temperature was 10 ℃
separately. The content of rutin
quercetin in the heated samples were determined by HPLC. Result: The content of rutin and quercetin were not change singnicantly from 120 ℃ to 170 ℃. The content of rutin was reduced significantly from 180 ℃ to 200 ℃ and the content of quercetin was increased significantly. The contents of the two compounds were all reduced. Conclusion: When the heated temperature between 180 ℃ to 200 ℃
rutin partially decomposed into quercetin. Over 210 ℃
