目的 :筛选蛋白酶酶解猪皮制备胶原的最佳工艺; 方法: 以胶原得率为指标
采用单因素试验及正交试验对酶解条件进行优选; 结果: 胃蛋白酶用量为3%
酶解液pH 2.0
底物质量浓度1 ∶28
温度0 ℃
酶解时间48 h时胶原的得率最高; 结论: 胃蛋白酶酶解猪皮制备胶原的工艺较好。
Abstract
Objective: Screen the optimum preparation for collagen by enzyme hydrolysis. Method: Enzymatic condition was optimized by single-factor experiments and the orthogonal design with collagen yield as the index. Result: The optimum extraction condition was obtained as follows:the ratio of enzyme/substrate was 3%

material-liquid ratio 1 ∶28
enzymatic hydrolyzed for 48 h at 0 ℃. Conclusion: Preparation for pigskin collagen by pepsin is better.
