Objective: To optimize extraction technology of total tannin from Galla Chinensis. Method: On the basis of single factor tests
water heating extraction process of total tannin from Galla Chinensis was optimized by Box-Behnken design by taking yields of gallic acid and extract as indexes. Result: Optimum extraction technology of total tannin was extracted twice with 10.4 times the amount of water at 62 ℃

compared with theoretical prediction values
their relative deviations were 3.30% and 0.35%
respectively. Conclusion: This optimized extraction technology of total tannin from Galla Chinensis is simple with high extraction efficiency and good predictability.
